I’m the first to admit I’m a little late to the strawberry rhubarb party this year. It’s not my fault! My day job has turned into a day-and-night job leaving little time to tend to matters of the kitchen. Take heart, yesterday morning I woke up with my priorities straight. I ran (literally) to the Fort Greene farmer’s market (site of the fiddlehead fiasco a few weeks ago) to fetch strawberries so small and sweet they resembled raspberries and tasted like jam. And I was delighted to see the rhubarb still hanging around, weeks after I first saw it (and rushed by it) at the Union Square Greenmarket.

But what’s that I see? Cherries?! I haven’t even tasted my first bite of a strawberry-rhubarb crisp this season and already there are cherries to contend with? Maybe next week. Yesterday I was on a mission and would not get distracted, no matter how sweet the cherries looked.

I was after the classic strawberry rhubarb pie. A fool’s mission, you may think, given the tendency for strawberries to explode mid-baking, making for a runny mess for your crust to sop up. So call me a fool. I love this particular pie. I love it in June (I love June period). I love it with ice cream or without. I love it standing up in a Brooklyn kitchen late at night or in a backyard in Vermont. And most importantly, so does my grandmother, and I wanted her to have a big ole piece of it.

I thought about fussing of course. I picked up and smelled the herbs at the market, wondering at first how sage would go with these flavors, then thyme, then mint. And then wondered about balsamic vinegar and black pepper, before deciding to keep it simple. Well, mostly simple.

The only two additions I allowed were freshly grated ginger and lemon zest, just to spice things up a bit without going completely rogue. I love the combination of rhubarb and ginger, and that of strawberry and lemon. The proof was in the filling: when baked this pie was not too sweet, but lusciously fruity, jammy, June-y, tart, with just a hint of the lemon and ginger to elevate the senses.

And fear not—the pie crust took all of five, maybe eight, minutes to make, and no food processor or pulsing required. I’d been wanting to try Cook’s Illustrated recipe using vodka in place of the water. The theory is that vodka, in large part pure alcohol, provides the necessary liquid to bind the dough, then cleverly evaporates during baking to yield a flakier crust. I proceeded cautiously and used only 1/4 c of ice-cold vodka (left over in my freezer from New Year’s), mixed with 1/2 c water. And you know what, the crust was buttery and flaky and darn tasty.

Next week: cherries anyone? And good luck to Rafa at the French Open this morning, I would love to see him put an end to Djoki’s streak. Only two months til the US Open!

Strawberry Rhubarb Pie

For the crust:
2 1/2 c flour (I like 2 c all-purpose and 1/2 c whole wheat pastry flour)
1 tbsp sugar
1 tsp salt
2 sticks cold, unsalted butter (16 tbsp), cut into small cubes
1/2 c cold water
1/4 c cold vodka

Combine the water and vodka, add an ice cube or two, and set aside. Mix the flour, sugar, and salt in a large bowl. Add the butter and work quickly (with a pastry blender, whisk, or your hands) to combine until pea-sized crumbs form. Add 1/2 c of the liquid and continue mixing. You can add the rest if and when you need it, which you probably will. Separate the dough into equal halves, flattening a bit and transferring to plastic wrap. Refrigerate for a minimum of an hour and up to one week.

For the filling:
1 1/4 lb rhubarb, cut into small pieces
1 lb strawberries, hulled and halved
1/2 c cane or white sugar
1/4 c light brown sugar
dash of salt
zest from 1/2 lemon
1 tbsp lemon juice
1 tsp fresh grated ginger
1/4 c corn starch
Optional: 1 egg yolk mixed with a little water for glaze

Preheat the oven to 400 F. Prepare to roll out the dough by cleaning a large surface and flouring it. I like to roll out dough directly on a large piece of saran wrap. Roll half of the dough into a roughly 12- or 13-inch diameter. Carefully transfer to a 9-inch pie dish and set aside.

In a large bowl combine the rhubarb, strawberries, sugars, salt, zest, lemon juice, ginger, and corn starch. Transfer the filling into the pie crust. Roll out the second half of the pie dough, this time to a slightly smaller diameter. Transfer over top of the filling, pressing around the sides to remove any gaps. Trim the ends of the pie and crimp the edges. Make decorative slits to let steam escape. Brush the top with the egg yolk mixture.

Place on a baking sheet and transfer to the oven, baking at 400 for 20 minutes, then turn the temperature down to 350 for an additional 20-25 minutes, until the crust is golden brown. Transfer to a wire rack to cool and let cool completely (if you can resist) before digging in.

It’s time I say goodbye to my dear friend Sarah. She was visiting me from Vancouver since Friday and we had a blast all over NYC. Highlights include: visiting the Tomás Saraceno sculpture on the roof of the Met (that’s a reflection of me in the sculpture above); eating in the new Wythe Hotel in Williamsburg @ Reynards; joking about “man repellent” clothing; Jones Beach; an inversion workshop at Jivamukti yoga school; and dinner at Kyo Ya.

Sarah and I met fourteen years ago at Pearson College on the southern tip of Vancouver Island, a wonderfully bizarre, idyllic school that brings students together from around the world to promote international peace. She was an alternative skateboarding punk from B.C. and we bonded instantly. Since then we’ve been pretty good about visiting each other nearly every year—sometimes I go to Vancouver and more often she comes here to NYC. Below is us at Habana Outpost in Fort Greene, doing our part at brokering peaceful international relations.

We ate like queens while she was in town. Three meals in particular stood out. Friday night we dined at the bar of Gwynnett Street, the new Williamsburg joint run by two former WD-50 chefs, Justin Hilbert and Owen Clark. Pete Wells gave this place two stars back in April, writing:

And while it is a restaurant in Brooklyn, Gwynnett St. is not really a Brooklyn restaurant. There are no butchers’ tools hanging from reclaimed barn doors. Under the eye of Carl McCoy, the proprietor, the dining room staff is calmly professional, utterly free of pretense and attitude. Nobody is the least bit likely to pull up a chair and offer to show you pictures of the sauerkraut the chef is currently fermenting inside a pair of Red Wing boots.

If only he were kidding about the sauerkraut pictures. But who am I to judge? I’m brewing kombucha atop my fridge as I write. At least it’s not brewing in my Toms shoes. Anyway…not only was the food at Gwynnett really solid, the service was attentive and atmosphere lively without being loud. I love a restaurant where you would just as much want to dine at the bar as a table—Dressler being one of my favorites for this—and Gwynnett is such a place. We started with whiskey bread served with cultured butter from VT, and a pea & mint salad. The peas were full of spring—bright and fresh and grassy—and the whiskey bread was decadent and a hint sweet. We then had duck that tasted like perfectly charred steak, and, just to be redundant, the steak with radishes two ways. (My mostly vegan diet mostly went out the window this week – I’m back on the wagon though. Side note: a guy turned to me in line at Chop’t yesterday and said: you know why this line is so long? Everybody was at the beach this weekend and thought, “I need to start eating salads for lunch.” Ha!) For dessert we had what tasted like amazing peanut butter and jelly, but was actually milk chocolate ganache, peanut crumble, and black currant somethingorother.

I had also been wanting to try Reynards, Andrew Tarlow’s new joint in the Wythe Hotel, also in Williamsburg. Shout out to my friend Hale Everets and his team for a really elegant redesign of this former waterfront factory. We met up with our friend Ella, also from our Pearson days, whom I hadn’t seen in many years, and feasted on a beet-and-mint salad; nettle toast; arctic char with spring vegetables; house-made sausage; lobster and peas poached in butter; chocolate olive oil cake; and Mast Brothers chocolate sorbet. The food was creative without being fussy. It was seasonal and fresh and really well seasoned. The place is a little sceney for everyday eating, but perfectly fun with out-of-town guests on a balmy holiday weekend. The staff are effortlessly hip in that Williamsburg way—lots of short denim cut-offs, wedge heels, and Warby Parker eyeglasses—but the clientele leaned more toward a slightly older out-of-town crowd with gold jewelry and blue blazers, guests of the hotel I imagine. After dinner we skipped the half-hour lineup for the rooftop bar (see what I mean, sceney) and headed down to Zebulon. I dig Reynards open kitchen design (below), to which we had front row seats.

And last but not least, there was Kyo Ya. For Sarah’s last night in town I thought dinner at this five-year-old Japanese joint hidden on East 7th Street was the proper sendoff. I made the reservation weeks ago. Since it was (also) reviewed in the Times not long ago, I didn’t want to take any chances. This place is charming in a hushed but not snobby way. It’s the kind of place you wish there were more of in this crazy loud city of no-reservation restaurants, open kitchens, new American cuisine, cool kids everywhere, and savvy marketing behind the next new thing. Kyo Ya is kind of opposite. The antidote to Gwynnett St. and Reynards, which don’t get me wrong, I really liked.

For starters, there’s something like ten tables at Kyo Ya. And a quaint staircase off the street level leading you to the subterranean restaurant (above). The entrance has leaves pressed between two large panes of glass and I noticed instantly upon entering that I was put at ease. We ordered a la carte rather than kaiseki, and chose the sea urchin, two bites worth of luscious uni served with small sheets of nori and fresh wasabi; chawanmushi, a silky, savory custard with shrimp and gingko nuts, among the best I’ve ever had; a smoked potato salad, made by dressing the potatoes in a smoked soy sauce; one of their specialities—pressed sushi with soy-marinated Canadian salmon (photo below); and snapper chazuke—a pot of rice served with snapper sashimi and little side toppings like shiso, wasabi, tiny cubes of daikon. At the end you pour green tea over your bowls of rice and mix with the leftover chazuke sauce. Each bite at Kyo Ya is a kind of revelation, a testament to chef Chikara Sono’s inventiveness paired with reverence for tradition.

It was a decadent meal in a very understated way, quite a fitting end to my week with Sarah.

Been too long since my last post.

It’s not that I haven’t been eating anything good, just nothing too post-worthy, but also I’ve just been busy. Working, occupying Wall Street, taking care of Grandma, studying Japanese. Even for me food can sometimes take a back seat. But not for long!

My slump changed on Saturday when a friend brought over last-of-the-season squash blossoms from the farmers market. The first time I had these babies was in Rome when I lived there back in 2003. I seem to remember they were something of a speciality in the city, especially stuffed with mozzarella (and sometimes anchovies), battered, and fried. In fact, that’s the only way I’d ever had them, from Rome to New York to Vermont.

But in a bold and unexpected move, my friend decided to serve them raw. She brought over a mixture of avocado and tomato and assembled them at the kitchen table, neatly spooning them into the cleaned blossoms. I was waiting for her to nudge me out of the way at the stove and start frying – I assumed they must be fried! – but she had us roll them up and bite in, unadorned by batter or copious oil. The avocado was a soft and creamy contrast to the somewhat sturdy petals of the blossom and the tomato provided just the acidic bite to round out the flavors.

So sometimes zucchini can get a bad rap. I’ve heard it referred to as a swollen ovary, immature fruit, and just plain nuisance. (My goodness, would you kiss your mother with that mouth?) It seems the supply and demand ratio is a bit off come August–September, with an over-abundance leading otherwise perfectly civilized folks to “zucchini” their friends, neighbors, and total strangers by leaving bags of the stuff in cars and on doorsteps. It’s a pastoral version of “ring and run.”

For those that don’t know, squash blossoms are  just that – the flower that blooms from both the male and female squash, and typically we’re eating the flowers from zucchini specifically. As I mentioned, they’re often served stuffed and then fried or baked, but you want to remove the pistils first from the female flowers and stamens from the males.  I mean, who wants to eat reproductive organs with dinner? And you can eat the whole flower but avoid the hard and fibrous stem.

We served the stuffed blossoms as a first course to a meal that included white beans simmered with turmeric, coriander, and chile; a pork roast with a rub of cumin, black pepper, and fennel seeds; and sauteed kale with cayenne, lemon and garlic. I think these may in fact have been the only swollen ovaries I had all summer, and according to signs at the farmers market last week, they will be my last, until next summer. Serves us right I suppose, for all the slandering of excess zucchini all summer long, that we should be denied any for another year. Who you calling swollen?
