Forget salt and pepper, garlic and lemon. The most successful seasoning for what we eat is a good pinch of nostalgia.

I could spend all day reading Nigel Slater. Correction: I have spent whole days reading Nigel Slater.

Slater is one of the best cooks writing today. His food is simple and straightforward, not unlike Jamie Oliver’s or Yotam Ottolenghi’s; it’s seasonally-driven, basic, and satisfies cravings you didn’t know you had. His writing has filled seven cookbooks and countless articles for The Guardian. His 2004 memoir, Toast: the story of a boy’s hunger, kept me up one night until I had no more pages to turn.

When Tender was published in the U.S. last year, combining the UK edition’s two volumes into one 600-page tome, I was eager to get my hands on it and smudge the pages with buttery fingers. Organized by ingredient (this seems to be a popular method in UK cookbooks), I stumbled upon the Beet chapter and not one, but two, cake recipes therein. This guy’s good.

Of course a cake that includes beets, melted dark chocolate, poppy seeds, and crème fraîche called to me, especially one that promised a molten lava center. I remember wanting to make this for my sister Hope’s birthday back in November but decided it was too risky. At last I’ve embarked on the project, during my own birthday week no less.

Turns out this chocolate cake is dreamy, silky, and not too sweet; the beets keep the cake moist without offering a beety flavor. Think carrots in a carrot cake, or zucchini in zucchini bread. The cake is served with tangy crème fraîche and poppy seeds, a playful take on the classic beet and sour cream flavor combination in eastern European cooking.

To serve, I thought of the china I keep in my cupboard that belonged to my father’s mother, my namesake, whom I never met. Reading Nigel Slater always makes me a little nostalgic, and the old, delicate china that once belonged to Mahala McLaughlin seemed like a fitting presentation.

Serve to friends. Serve with love. And you don’t have to tell anyone there are beets inside, unless, like me, they’re into that kind of thing.

Incredibly Moist Chocolate Beet Cake
From Nigel Slater, Tender

8 ounces (240 g) beets, unpeeled and rinsed (approx. 2 beets)
7 ounces (200 g) bittersweet or semisweet chocolate, chopped
1/4 c (60 ml) hot espresso
7 ounces (200 g) butter, room temp, cut into small cubes
1 cup (135 g) flour
3 tbsp unsweetened cocoa powder
1 heaping tsp baking powder
5 large eggs, separated, at room temp
1 cup (190 g) superfine, or caster, sugar

Butter the bottom and sides of an 8-inch (20 cm) springform cake pan, then line with a disc of parchment paper. Preheat the oven to 350 F (180 C).

Cook the beets, whole and unpeeled, in boiling, unsalted water for 30 to 40 minutes, with the lid slightly askew. They’re done when a knife can easily pierce through the flesh. Drain and rinse in cold water. When cool, peel them, and pulse in a food processor until they’re a rough purée.

Melt the chocolate in a bowl over a pot of simmering water. Do not stir. When the chocolate is just about all melted, turn off the heat, and add the hot espresso, stirring only once. Add the butter to the melted chocolate, pressing it into the chocolate but not stirring. Leave to soften.

Sift together the flour, cocoa powder, and baking powder. Put your egg whites in a mixing bowl. Stir the egg yolks together by hand.

Working quickly but gently, stir the butter into the melted chocolate, and leave for a few minutes to cool, then stir in the egg yolks. Fold in the beet purée. Whisk the egg whites by hand or using a stand mixer until stiff, then fold the sugar into the egg whites. Fold the egg whites and sugar into the chocolate mixture, careful not to overmix. Fold in the flour and cocoa.

Transfer quickly to the prepared cake pan and put in the oven, turning the temperature down to 325 F (160 C). Bake for 40 minutes; the rim will just barely be separating from the edges and the center will still be a bit wobbly when gently shaken.

Let cool completely in the cake pan on a wire rack (it will sink a little in the center). Loosen around the edges with a butter knife after a half hour or so. Only remove the cake from its pan when it has cooled completely. Serve in thick slices with crème fraiche and poppy seeds. Grandmother’s china optional.

Back in 2009, while I was still at Phaidon, I worked on a cookbook called Coco, which I’ve probably mentioned here before. It was part of the 10×10 series Phaidon publishes, whereby ten heavy hitters in their field (be it architecture, graphic design, fashion, etc.) each select ten emerging talents in that field. Coco was the first food book in that series, and the curators selecting the underlings included Ferran Adrià, Mario Batali, Alice Walters, and René Redzepi.

For his selection of up-and-comers, Batali stuck to his coterie of former chefs and sous chefs, and among the emerging talent he chose was Mario Carbone. Truth be told, I hadn’t heard of Carbone before then, even though he had cooked at Del Posto, Babbo, WD-50, Café Boulud, and a personal favorite, Lupa, in the West Village. Quite the pedigree for someone not even thirty years old. (That’s his spread in Coco, below.)

The funny thing is, Carbone was somewhat between restaurants at the time. And to be featured in Coco, each chef needed to be currently head chef at a restaurant. Carbone was technically heading up Aeronuova, a new Italian restaurant in Terminal 5 at JFK. It was a little unusual, but my guess is he was brought on to put together their menu and do initial recipe consulting. When I was compiling the directory of restaurants I didn’t even know what address to publish: Terminal 5, JFK Airport, Queens, New York? But I knew something was up his sleeve, and Batali’s sleeve, because they seemed to suggest a new restaurant was in Carbone’s future, but it just wasn’t open yet.

And sure enough, as Coco hit the bookstores, a little red-sauce joint known as Torrisi Italian Specialities opened on Mulberry Street, near Prince Street, in December 2009, serving Italian-American staples like meatball subs and eggplant parm at the counter. Carbone and his co-chef and co-owner, and former Boulud colleague, Rich Torrisi, have created a kind of post-postmodern mecca of ziti and antipasti in Little Italy. Amidst all the fading tourist-trap pasta joints and clam bars on Mott and Mulberry Street. It’s a throwback to your Italian grandma’s Sunday suppers in Queens (or New Jersey, or Long Island), gravy and all. But the ingredients are good. Really good. Not imported from Italy, but all domestic and/or made in-house, like mozzarella made to order and house-cured olives. Olive oil from California that’s so good they should serve it in a demitasse cup for dessert, sprinkled with sea salt from Coney Island.

All this time I’ve been wanting to see what the buzz is about. In the meantime, Torrisi and Carbone opened Parm next door to Torrisi, a more casual restaurant serving some of the old favorites (like the subs), without the long waits and hard-to-get reservations of Torrisi, which now only serves a tasting menu or prix fixe but no more a al carte at dinner.

Good thing my friend Daniela came to town. Super foodie, blogger for Eater LA, trained pastry chef, food writer, this woman eats professionally. It was the perfect opportunity to try both Torrisi and Parm. So within a span of a few nights we dined at each place, allowing for a side-by-side comparison of the more upscale Torrisi, and low-brow Parm. At Torrisi we were greeted with four antipasti for the table, including the famed mozzarella, hand-pulled to order, drizzled in that delicious, fruity olive oil and crunchy sea salt. When left to rest at the table, the mozzarella became more enjoyable, softer, and more buttery, then when it was first set down. It was served with four small perfect pieces of garlic bread: saltier, crunchier, cheesier, more garlicky than you’re expecting. When our busser cleared the empty plate we both nearly lept to keep the dish so we could lick the crumbs. We stopped ourselves. As part of our antipasti, a warmed parsnip cider was served in an espresso cup with a cool apple foam on top. Raw fluke Americain provided a clean, fresh bite between all the cheese and dough. Lastly, for the antipasti, was a rustic rabbit terrine served with pickled vegetables.

The pasta course, spicy sea shells di mare, was solid—the fish and shellfish were all cooked well, the pasta al dente, the sauce salty and spicy. It didn’t knock my socks off but it was darn tasty. For our main courses we were served skate giardinia and local duck with mulberry mustard. But by the time these mains came we were, well, stuffed like shells. I thought the main successes of the night were served at the bookends, our antipasti and the pastry: butternut squash custard, pizzelle cannoli, almond rainbow cookies, celery cake with green jelly and peanuts (a take on ants on a log), and a chocolate-mint truffle.

We arrived at Parm a few nights later (shot of the bar above), rain-soaked, hungry, and in need of some comfort food. We had come to the right place. We only waited twenty minutes at the bar for a table, then ordered up what seemed to be the must-haves: eggplant parmesan with a “Sunday salad”—iceberg lettuce, hot pickled peppers, cucumber, and red onions, served with a vinegary dressing—a veal-and-pork meatball platter served with ziti and meat gravy; Brussels sprouts; cauliflower; and the plate-licking garlic bread we’d had on Tuesday. The favorites were the eggplant parmesan, which really did taste like my Italian (step) grandmother used to make when I was little, the Brussels sprouts, and the cauliflower. The sprouts were caramelized and served with thin crunchy slivers of red onion, parmesan, sea salt, and garlic. The cauliflower was nicely browned and seasoned and honestly tasted like candy in that way that only really good cauliflower can. Again, like my Italian grandma used to make. These guys are good.

The only sore spot in the evening at Parm came with the meatballs. First off, they were served flattened, and stacked, like a double hamburger. Maybe this is typical in some nonna’s kitchens but I know them to be rounded, and sized somewhere between a golf ball and baseball. The main issue, however, was that they were not properly cooked. The meat was verging on rare, cold in the center even. Our server argued with us, saying he was sure they were cooked through and that’s how they do it here. Minus two points.

Using the four-star system of the Times, I’d give Torrisi two stars and Parm one star. Two to Torrisi for the service, atmosphere, antipasti, and pastries. One to Parm for the tasty eggplant, cauliflower, Brussels sprouts, garlic bread, and friendly hostess. Tell your nonna, Little Italy is back.

Heirloom beans are romantic, beautiful, and actually good for the soil and your body. So what’s not to like?

So says Steve Sando, founder of Rancho Gordo, a farm based in Napa, California that grows heirloom beans and produce. I couldn’t agree more. I mean, even the names are romantic: Good Mother Stallard Beans, Jacob’s Cattle Beans, Eye of the Tiger Beans, European Soldiers, Red Nightfall, Yellow Indian Woman, Scarlet Runners, Rio Zape, and Black Valentines. Rancho Gordo is the big pinto in town. One of his most ardent fans is Thomas Keller, who uses the beans in all of his kitchens, from the French Laundry to Per Se.

Last week, with New Year’s Eve on the horizon, I decided to pull out the Rancho Gordo cookbook, Heirloom Beans, and see what Sando had to say about making a big pot of warm, hearty soup. Traditonally, in the southeastern United Stations anyway, it’s good luck to eat beans on New Year’s day, particularly black-eyed peas. For New Year’s Eve company, I settled on a spicy-sounding Caribbean black bean soup with roasted garlic and tomatoes. Just the thing to ring in the new year and warm up a cold night.

2012 is gonna be an excellent year, don’t you think?

Caribbean Black Bean Soup with Roasted Garlic and Tomatoes
Serves 4

6 garlic cloves, unpeeled
2 tbsp olive oil, plus more for drizzling
4 whole fresh or canned plum tomatoes, with juice
salt
1/2 lb black valentine or black beans, cooked, with reserved broth*
1/2 medium yellow or white onion, chopped
1 jalapeño pepper, chopped
1 medium carrot, chopped
1 1/2 tsp cumin seeds, toasted and ground
1 tsp dried oregano
1/2 tsp cayenne pepper
2 c chicken or vegetable broth**
freshly ground black pepper
sour cream, for garnish
1 avocado, pitted and sliced, for garnish
fresh cilantro leaves, for garnish

*I’d recommend cooking your beans by first soaking them for a minimum of 2 hours and maximum of overnight, covered with about 2 inches of water. (Actually first make sure you rinse them thoroughly and pick out any pebbles.) After soaking, pour the beans with their soaking water into a large pot, covered by about 1 inch of water (or stock). For flavor you can add a carrot, celery stalk, fennel bulb, onion, leeks, whole garlic cloves, black peppercorns, bay leaf, juniper berries, mustard seeds. You can also keep it simple and not add much. Just don’t add salt until after they’re cooked. Bring the beans and water to a boil then reduce heat to a simmer, with a partial lid, and cook until done, which can take as little as 1 hour or as much as 3 hours.

Preheat the oven to 400 degrees F.

Put the garlic cloves on a sheet of aluminum foil and drizzle with olive oil. Wrap the foil. Put the tomatoes in a baking dish, and if using fresh tomatoes, cut them in half and put them cut side down in the dish. Season with salt and drizzle with olive oil. Roast the garlic and tomatoes until soft, fragrant, and brown, about 20 minutes.

Meanwhile, put the beans and their broth in a soup pot and warm over low heat.

**I recommend making your own broth. For a quick vegetable broth I brought about 1 quart of water to a boil in a stock pot with 1 carrot, cut in half, 1 onion, also halved, 1 fennel bulb, halved, 1 celery stalk, halved, 1 clove of garlic, smashed, and a little satchel of spices: black peppercorns, mustard seeds, juniper berries, and cumin seeds.

In a medium, heavy skillet over medium-high heat, warm the olive oil. Add the onion, jalapeño, and carrot and sauté until fragrant and beginning to caramelize, about 10-12 minutes. Add the cooked vegetables, cumin, oregano, cayenne, and broth to the beans.

Peel the roasted garlic cloves; chop the garlic and tomatoes coarsely and add to the beans. Season with salt and pepper to taste. Bring to a simmer over medium-low heat and cook until the vegetables are soft and the flavors are blended, about 15 minutes.

Let the soup cool slightly, then transfer about half to a blender and blend until smooth. Return the soup to the pot and stir to combine. Season to taste. Serve the soup garnished with sour cream, avocado, and cilantro. Corn bread would make a nice side dish.
